Due to increasing demand for wedding receptions, in 2005 (after 8 years of also operating as an A la Carte restaurant), Trent’s became a function venue. This allows the whole day to be devoted to one wedding or function, ensuring that everything can be taken in a timely and stress-free manner. You are welcome to visit us, at Trent’s, to see the surroundings for yourself. A good time to come out is when we are setting up for another wedding which is most Fridays and Saturdays, from September to April, between 11 am and 1 pm. John and Sue

John and Sue Shanks have been the sole owners and managers of Trents since it opened in 1997. Prior to starting Trents they worked and traveled overseas for 15 years, eventually returning to raise their family and start a vineyard restaurant. They then spent 24 months planting the vineyard, designing, strengthening and restoring the historic chicory kilns to become the beautiful venue it is today, before finally opening in October 1997. The 50 acre property has been in the Shanks family for almost 50 years. The paddocks surrounding the venue are used for grazing horses and making hay, with the large field of daffodils providing a dazzling display for early spring weddings.

Trents Operations Manager – Eloise McIntyre

Eloise is there to ensure your wedding day runs smoothly and to help with planning the day. She will meet with you about a month out from the wedding to go through all the details. She can also help you with any queries you may have in the lead up to your wedding. Eloise has worked in the hospitality industry for six years, specialising in event management, and has been involved in a large variety of events, ranging from intimate corporate functions to large gala award dinners. She is familiar with all aspects of running a wedding at Trent’s, having worked the 2017/18 wedding season with us. She is a friendly, trustworthy, hard working member of our team. Head Chef – Sho Ishizuka

Sho has been with Trents since 2002 and has been Head Chef since 2007. His strengths are ensuring that every dish is consistently beautifully presented with wonderful flavours.  Sho runs the kitchen in a calm and orderly manner with a particular emphasis on cleanliness and neatness. Trent’s outstanding reputation for providing high quality cuisine is testament to his work.
